Because of the known problems hard disc drive camcorders have with vibration (even from loud audio) and high altitude, I no longer recommend them. That drops the HDR-SR8 and HG21 off the list. As well, both of these record high definition to anemic AVCHD... three strikes and they're out.
The HVR-HD1000 looks impressive because it is big... and it is in the Sony Pro HVR line, but it has the same sized lens and imaging chip as the HDR-HC9 consumer cam. It has only a 3.5mm mic jack - this can be upgraded with an XLR adapter from BeachTek or juicedLink to accommodate pro-grade XLR connector based mics. The biggest advantage it has is that is is a shoulder mount.
The HDR-FX7 is the consumer sibling of the HVR-V1. The biggest difference between the two is that the V1 has XLR connectors and some better firmware than the FX7. The FX7's 3.5mm mic jack can also be upgraded with an XLR adapter from BeachTek or juicedLink to accommodate pro-grade XLR connector based mics. The FX7's low-light behavior will be a lot better than the HD1000 - but not as good as the HDR-FX1 or HDR-FX1000 (whose pro-sibling is the HVR-Z1).
So... ranking choice:
1) HDR-FX7
2) HVR-HD1000
